Ingredients
- 1 jar of organic Prosain chickpeas
- 1 egg
- 40 g rolled oats
- 1 small shallot
- 1 clove of garlic
- 1 tsp cumin
- 1 tsp paprika
- A few mint or parsley leaves
- A drizzle of olive oil
- Salt
- Pepper
For the sauce
- 120 g plain yogurt
- Juice of half a lemon
- A few mint leaves
- Salt
- Pepper
Preparation
- Drain and rinse the chickpeas.
- Mash them coarsely with a fork, keeping some texture.
- Finely mince the shallot and garlic, then add them to the chickpeas.
- Incorporate the egg, rolled oats, cumin, paprika, and chopped herbs.
- Season with salt and pepper, then mix until you obtain a homogeneous mixture.
- Form about 6 patties with your hands and place them on a baking sheet covered with parchment paper.
- Drizzle a little olive oil over the top.
- Bake at 190°C (375°F) for about 25 minutes, turning them halfway through cooking.
- Meanwhile, mix the yogurt with the lemon juice, mint, salt, and pepper.
- Serve the patties while still warm with a spoonful of the lemon yogurt sauce on top.
Tip
Add a pinch of Espelette pepper or a few sesame seeds to the mixture to give the patties even more character.
